Creamy Raw and Dreamy.....

Caramel Tangerine Passionfruit Dream Slice

Getting creative in the kitchen is one of the most self soothing, self loving and self caring things you can do for your gorgeous body and soul!!!

Working with whole food goodness straight from Mother Earth brings about a sense of vibrancy, gratitude and fulfilment especially when you know what is in your creations and how it's going to energise, nourish and feed your cells.

Scott Mathias from the Sunshine Coast, QLD, is one clever and creative raw food chef who empowers families with his delicious local plant based food delights. He has a delicious cafe called GoVegan Deli in Thomas Street Noosa with a friendly, approachable and kind heart.

The following recipe has been inspired by Scott's Coconut Cashew Zabaglione with seasonal fruit. (out of his second book 'Raw Vegan Meals') Thanks Scott!! x

Now before I start, I have to be honest, I had no idea what Zabaglione was.... thanks to google I now know that it is a famous Italian dessert, traditionally made out of egg yolks, sugar, marsala and sweet wine.... hmmm... so now to swap over those ingredients that don't energise and nourish our cells.

This is my re vamped version with YL culinary essential oil of course - 
Optional for added awesomeness :)     

** How exciting that the first three ingredients also form the basis for an outrageously raw phili cream coconut cheese.

Ingredients

500g cashews soaked overnight
350 ml organic coconut cream (or milk) 
1 dessert spoon of coconut oil
1/2 tsp vanilla essence
1/4 tsp sea salt
1 cup soaked overnight dates 
3 drops of YL tangerine essential oil
2 tbs passionfruit pulp 


Drain cashews and dates, place all ingredients together and blend.
Taste for desired sweetness (may like to add coconut nectar or maple syrup however I felt the dates gave enough sweetness) 
Place in a fancy tray, slice tin or individual cups. 
decorate with fruit of choice (I used fresh pineapple)
And place in the fridge... perfect for a dessert or place in freezer if you would like frozen delights. 
Slice up when you have visitors pop over!!!  




Why add tantalising tangerine?
I use this essential oil and other citrus oils on my stomach, butt and thighs after I have a shower.... 
I also add them to my water through out the day and love having citrus in my diffuser..... 
I also know that this oil is extremely uplifting, motivating and refreshing for the soul!!!
