Caramel Slice Re-Vamped 


Who doesn’t love a delicious slab of gooey caramel slice??
Yes, back in my 'unconscious’ living days I was one of those teenagers who use to come home from high school, delve deep into the fridge to grab out a can of condensed milk and sit there with a tea spoon…. Yes I did…. 
I couldn’t get enough of this sweet nectar….

Ok, so it's been years since I have done that. Now with a new change of perception and awareness, these days I get my sweet craving fix from whole foods… whilst nourishing my body, not depleting it. Pure guilt free goodness (and yes you can over indulge on the good stuff too).

I recently helped facilitate a conscious living workshop with three beautiful souls. One of the creations was a RAW caramel slice… so this blog is dedicated to them.. Thanks for the inspiration Kerry, Michael and Amanda and for being part of this conscious global wellness revolution - creating change and better solutions for all. 




**RAW CARAMEL SLICE**

3 Layers of LOVE:

Base: 
1/2 cup of dates (pitted and soaked if not medjool)
1 1/2 cups of almonds or cashews soaked (or any of your fav nuts)
2 drops of Valor essential oil (optional, can use any YL oil you like! Or vanilla extract)

Gooey sauce:
1 cup dates (pitted) and soaked if not medjool dates
1/2 cup maple syrup 
1/2 cup tahini
1/2 cup coconut oil
dash of vanilla extract
1 cup of raw cashews, soaked
Pinch of sea salt

Choc top:
1/2 cup coconut oil
4 tbs of cacao powder
4 tbs of maple syrup/honey/coconut nectar 



Start with the base. Blend the dates and nuts together in a food processor until it’s at a fine consistency. Add the oil or vanilla extract and blend once more. Grease a slice tin with coconut oil and spread the base layer out on the bottom. Freeze for about an hour.


For the gorgeous gooey sauce; blend all of the ingredients together until it’s nice and creamy. Pour over frozen base… place back in freezer for about 30 mins


Onto the last layer of LOVE chocolate :)
Melt the coconut oil (if not already) mix in cacao powder and sweetener of choice. Whisk until it's at a nice velvety creamy texture and pour over the two layers. Place back in the freezer for an hour and indulge...
